How Dairy Custard is Produced

Dairy Custards are made by the addition of flavourings, sugars, thickeners(such as starch and skim milk powder to pasteurised / homogenised milk or low fat milk. The mixture is heated to 90 C for 15 minutes to activate the starch to thicken the mixture. This heat treatment also serves to kill any undesirable bacteria which may be present. Now the mixture is cooled and packed.
